With its white alluvial soils, block 6B is consistently a top performer. A complex and inspirational wine, Fairview boasts a collection of exotic varietal flavors including crystalized ginger, honey, kumquat, Kaffir lime, and Meyer lemon. The 2019 vintage unfolds in the glass with compelling and appealing flavors that emerge with each taste. Drink now or hold for ten years or more.
It makes sense that a great Cabernet vineyard would also be a great place to grow Sauvignon Blanc grapes: Cabernet Sauvignon is a coupling of Sauvignon Blanc and Cabernet Franc and we plant all three varieties on our estate vineyard. We night harvest by hand to preserve complex aromas and flavors and for better control over the fermentation process. The grapes are then sorted and lightly pressed; the juice is settled completely before beginning a slow fermentation at cool temperatures.
