2016 Knights Bridge Pont de Chevalier Sauvignon Blanc
The growing season of 2016 is one with minimal complaints in terms of weather, as well as quantity and quality of fruit. The few challenges of the vintage presented themselves early, with a slightly advanced bud break followed by early spring rains. These conditions resulted in smaller berries and clusters, although ultimately intensely expressive fruit. Summer was idyllic, with very few heat spikes, and a slightly cool August allowing for extended flavor development.
Our grapes were picked in the pre-dawn hours over several days in early September. Upon harvest, the grapes were gently whole-cluster pressed and then hyper-oxidated and allowed to settle for three days. For fermentation, the juice was racked clean to mostly stainless steel with 10% of the juice transferred to new Taransaud barrels. Malolactic fermentation was inhibited. After fermentation, the wine aged for six months prior to bottling.
