2013 Pont de Chevalier Sauvignon Blanc
Dry conditions and a long, sunny summer ensured that 2013 was a phenomenal follow up to the stellar 2012 vintage. The Sauvignon Blanc in our Knights Valley vineyard was outstanding - bright, vibrant and balanced, reaching ideal phenolic maturity.
The grapes were hand-harvested in the early morning of September 9, 2013. The fruit was pressed whole-cluster before the juice was hyper-oxidated and allowed four days to fully settle. It was then racked cleanly to stainless steel barrels and 10% new French oak barrels for primary fermentation while malolatic fermentation was inhibited. The wine was aged for five months prior to bottling.
