But what do they say about adversity?<br /><br />You may have heard about the 2010 vintage, with its relatively cool summer, exceptional heat spikes and early rains. But what do they say about adversity? That it can build character and complexity. And that perfectly describes our 2010 wines. The early signs all point to an exceptional vintage.

	All wines are now fermenting in barrels. We taste them often to monitor the evolution of the wines as they finish primary and secondary fermentation. It&#39;s a relatively quiet time for us as we allow the wines to discover their individual personalities.]]></description>

		<title><![CDATA[Our Chardonnay is in barrel!]]></title>

		<description><![CDATA[The wait is finally over - our Chardonnay was harvested on October 11th and is in barrel right now fermenting. We taste it daily to see how it is evolving.<br /><br />The wait is finally over - our Chardonnay was harvested on October 11th and is in barrel right now fermenting. We taste it daily to see how it is evolving. We are also out sampling our Cabs every other day to check flavors and monitor sugar, pH, and acidity, while determining processing actions. This includes everything from deciding how to de-stem the Cab fruit to choosing barrel profiles and coopers for the wines.

	It&#39;s a busy, very productive time at the winery, while one year draws to an end and we simultaneously ready ourselves for next year&#39;s vintage.]]></description>

		<description><![CDATA[With the cool year we&#39;ve experienced until the past few weeks, harvest will occur a bit later than usual. Right now, we are in a hurry up and wait mode. We are spending much of our time in the vineyards, sampling the berries - checking the flavors, brix, titrable acidity and pH. We&#39;ve also been re-tasting our 2009 red wines and working through some preliminary blends.<br /><br />With the cool year we&#39;ve experienced until the past few weeks, harvest will occur a bit later than usual. 	And, of course, we will spend this time preparing for harvest - making sure we have everything we need in time, such as barrels, yeast, and other equipment. It&#39;s an anticipatory time, but one filled with quite a bit of activity and anticipation.]]></description>

		<title><![CDATA[Gearing up for harvest]]></title>

		<description><![CDATA[Prior to the harvest season the winery is buzzing with action. We are running from the vineyards to the winery - going from tasting grapes to tasting the previous years wines. The 2009 Cabernets will be racked (siphoning the wine from the sediment into clean barrels) to aerate the wine and open up the bouquet before they go back in barrel to age for the next six months.<br /><br />Prior to the harvest season the winery is buzzing with action. 	And, believe it or not, we are already starting to gear up for harvest - ordering barrels, working out the processing decisions, and walking the vineyards regularly to assess progress and potential. A very exciting time as we continue the cycle of creating great wine - experiencing the rewards of previous harvests while preparing for the next.]]></description>
