Our estate Sauvignon Blanc is planted in hillside alluvial soils. A later harvest, great sun exposure throughout the day, and cool nights produced a Sauvignon Blanc that is distinctly delicious.
Winemaker's Tasting Notes: Made from 100% Sauvignon Blanc, complex tropical notes are emphasized in this wine, along with hints of white peach and mango in the nose, followed by fresh citrus flavors of key lime, grapefruit, and a minerality that is distinct to this site.

Winemaking Techniques: From our Knights Valley Estate Vineyard we selected sauvignon blanc to ripen on the vine to about 23 degrees brix to explore the full flavors of this varietal. The wine was tank fermented at cool temperatures (59-62°F) to preserve lively grape aromas and then racked to neutral French oak barrels toward the end of fermentation. The yeast and grape solids or "lees" were maintained in the barrels to add complexity during the eight month aging period.
